Kitchen Creations on the Cheap

We have been living for weeks out of what is in our pantry and the garden and have come up with some wacky creations... Today it was:

Lentil Burgers 

2 cups cooked brown lentils

2 eggs

1/2 cup flour

1/2 large onion diced

2 tablespoons of dried chives

Method:

Blend all together and fry in a little olive oil till firm and brown.  Serve with hot vegetables.

And later  Easy Peasy Cheesy Damper for afternoon tea and later for dinner with soup.

3 cups sr flour

1/2 cup finely grated parmesan cheese

1 teaspoon salt

2 tablespoons dried chives

2 tablespoons olive oil

enough water to make a soft dough

Method

Knead well and then place about 4 tablespoons of olive oil in a frying pan (one with a lid) and cook on a very low heat till cooked right thru - this can take some time and the damper needs to be turned regularly in the cooking process.

World's Yummiest Hommous

Cold Compressed Olive Oil - about 1 cup

Lemon Juice - about 1/2 cup

Tahini - about 2 large tablespoons

Garlic - to taste - for me at least 6 cloves

Cooked Chic Peas (til very soft) - 2-3 cups

Chili - 1/2 to 1 teaspoon

Salt - to taste

Method - Either mash together by hand with fork or potato masher or blend till smooth.

Taste and adjust flavors till you get what you like.

Variations -Add in spinach(cooked) or fresh coriander chopped or blended in.

Delicious served any time in sandwiches, as spreads, dip with vegetable sticks or lebanese or turkish bread or crackers or chips!

We eat this lovely dip a lot and it saves hours of slaving over a hot stove, yet we are eating good healthy food and lots of it!!  When you have teenagers or others in your home who tend to eat meals at odd times dips are an ideal way of feeding them.
